They develop the characteristic aromas, colors and flavors of a slow ripening process, typical of this type of climate. The vineyard is planted on a clayey and granitic soil, of low fertility, and is trellised to the vertical shoot position, giving life to wines of outstanding quality. The 2018 growing season was characterized by rather warm temperatures, thus requiring to harvest about two weeks earlier. The grapes, which reached a perfect ripeness and a great quality, delivered wines of great body and intense aromas. The grapes were harvested by hand in 10-kg boxes, and a large percentage of them was pressed in whole bunches. The rest underwent a cold maceration of eight hours in the press. Most of the most was fermented in barrels and concrete eggs, and a very small portion in stainless steel. The wine was kept in its respective containers during six months before bottling.
