This is a Sauvignon Blanc single varietal wine elaborated after careful selection of the best stocks planted by the López-Montero family 18 years ago.
This single vineyard wine comes from Casa Ramiro estate, whose poor, shallow soil has a very high limestone content.
This wine ages in Roc Cuve® barriques for four months. The daily batonnage of its lees brings about intensified aromas and fullness in the mouth. “Cuvée 1222” refers to the number of bottles produced in the first vintage of this singular wine.
Winemaking: Selection of grapes and cooling with carbonic snow. Pre-fermentation maceration in deposits for 72 hours. Free run juice extraction. Fermetation in square barriques. Aging in square barriques of French oak for five months with daily batonage. Bottle aging for 12 months.
Pale yellow with golden hints, brilliant. Thick with slow tears. Herb and spice tones. Mineral and saline character, balsamic with a slight touch of honey and lemon. Perfect integrated wood. Good acidity. Sharp touch of wood bringing toffee, condensed milk and nuts.
Food pairings: This is a very complex wine but with an easy drinking character. It goes well with plenty of salads, smoked fish and nuts; cheese and pasta with white sauce. Rice, white meat and fish, especially cod, tuna and salmon.
